Breakfast time

I love to find a new way to prepare foods I eat.  Better yet when they turn out tasty and become a favorite item.

Recently I prepared some pulled pork off the smoker grill using the Bull Rack System and Bear Claws.  This is what I did...

1.5 tbsp of oil

1 cup prepared white rice

1 cup pulled pork

2 eggs

Season to taste

Sharp cheddar cheese

1 cup Coleslaw

Bit of ranch dressing or your favorite sauce

Put the oil in a cast iron pan and then place the pulled pork and turn the heat to medium high.  Next add the rice on top of the pulled pork.  Mix it up a bit but not too much.  I like to leave the meat in chunks with a bit of rice between.  Grab your eggs and crack them onto the rice.  Now add some water to the pan and cover to steam the eggs.  Turn the heat down to medium now.  It is done when the whites of your eggs are firmed up the way you like it. 

Plate the cook, add your coleslaw on top, grate some cheese and add your sauce of choice.  I like ranch dressing.  Add a bit of salt and pepper and you are ready to eat!

Enjoy!  I love the texture of the fried pulled pork, the crunchiness of the rice and the combination of flavors from the home made coleslaw and eggs!
