The Fatty. A fatty is bacon laced sausage with an internal filling rolled into a loaf and grilled up to perfection. There are as many variations of a fatty as there are cooks!
This one used:
- Pork bacon
- Jacob sheep sausage
- Sauteed potatoes/red onion, kale and seasonings with cream cheese folded into it
- Smoked egg (from previous cook) cut into halves and cheddar cheese
I prepared the bacon first on wax paper and then topped it with the rest of the ingredients. Once this was stacked, I rolled the bacon around to form a loaf and the ready to cook "Fatty". This went on my smoker grill... using the Bull Rack System with a drip pan below for about 4 hours +/-. The temperature started at 180 and then finished off at 425.
The end result was tasty goodness that is well worth the effort! Cleanup was a breeze... check out the last picture for the drip tray (at the bottom) and what I kept out of my grill... making it it easier to clean!
